Instructions

Drain, and immediately immerse in the ice water to stop the cooking process. Drain again, and transfer to a towel to dry completely.
- Toast the almonds: Heat a cast-iron skillet over medium heat. Add the sliced almonds to the dry skillet and toast, stirring frequently, until golden brown and fragrant, about 2 to 3 minutes. Remove the toasted almonds from the pan and set them aside.
- Sauté shallots and green beans: Add the olive oil to the same skillet, reducing heat if necessary. Add the thinly sliced shallot and ½ teaspoon sea salt, sautéing for about 2 minutes until softened. Add the blanched green beans and continue to sauté for an additional 2 to 4 minutes, stirring occasionally, until the beans are warmed through and tender but still crisp.
- Add garlic and lemon: Remove the skillet from the heat. Stir in the grated garlic clove and fresh lemon juice, tossing everything together to combine the flavors well.
- Season and serve: Taste and adjust seasoning with more sea salt and freshly ground black pepper as desired. Transfer the green beans to a serving dish and sprinkle the toasted almonds on top. Serve immediately for best texture and flavor.
