Description

Grilled Bruschetta Chicken is a delicious and flavorful dish featuring juicy grilled chicken topped with melted mozzarella cheese and a fresh tomato basil topping.

For the Chicken:

  • 4 boneless skinless chicken breasts, pounded to even thickness (1 inch or less)
  • 2 tablespoons oil
  • 1 teaspoon Italian seasoning (OR 1/4 teaspoon each dried basil, dried oregano, and dried thyme)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 slices mozzarella cheese

For the Tomato Basil Topping:

  • 3 roma tomatoes, diced
  • salt and pepper to taste
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons finely chopped fresh basil

Instructions

  1. Prepare the Chicken: In a large bowl, combine chicken, oil, Italian seasoning, garlic powder, salt, and black pepper. Stir to coat the chicken evenly. Grill over medium-high heat for 6-8 minutes on each side until cooked through.
  2. Make the Tomato Basil Topping: In a medium bowl, combine tomatoes, salt, pepper, lemon juice, and basil. Stir well.
  3. Finish the Dish: Once the chicken is cooked, top each breast with mozzarella cheese and cook for an additional minute until melted. Top with tomato basil topping and serve.

Notes

  • Bruschetta topping can be made in advance and stored in the fridge until ready to serve.
