Chicken:
- 4 5-7 oz chicken breasts, pounded to even thickness
- 2 teaspoon Italian seasoning
- 2 teaspoon sea or kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cracked black pepper
- 1 tablespoon olive oil
Caprese Toppings:
- 8 oz fresh mozzarella, sliced into 8 pieces
- 2 vine-ripened tomatoes, sliced into 1/2” slices
- Fresh basil leaves
- Aged balsamic or balsamic glaze
Instructions
- Prepare the chicken: Pound chicken breasts to an even thickness. Combine the seasoning blend and apply to chicken.
- Grill the chicken: Cook on high heat for 5-6 minutes per side until internal temperature reaches 155°F.
- Add toppings: Top each chicken breast with mozzarella slices and grill until cheese melts and internal temperature reaches 165°F.
- Assemble: Place chicken on a platter, add tomato slices, basil, salt, pepper, and balsamic glaze.
Notes
