Shrimp Marinade
- 5 lbs shrimp
- 2 limes juiced
- 2 cloves of garlic minced
- 2 Tbsp olive oil
- 1 tsp mild chili powder
- 1/2 tsp salt
- 1/4 tsp pepper
Mango Salsa
- 15 oz can Del Monte Diced Mangos drained
- 2 Tbsp cilantro chopped
- 2 Tbsp red onion diced
- 1/2 lime juiced
- 1/2 tsp salt
Instructions
- In a large bowl, mix together the ingredients for the shrimp marinade. Combine 2 limes juiced, 2 cloves of garlic minced, 2 Tbsp olive oil, 1 tsp mild chili powder, ½ tsp salt, and ¼ tsp pepper.
- Add the shrimp and marinate for 30 minutes (if the shrimp are frozen, thaw them first).
- While the shrimp are marinating, combine all the ingredients for the mango salsa and stir to combine. Mix 15 oz can Del Monte Diced Mangos drained, 2 Tbsp cilantro chopped, 2 Tbsp red onion diced, ½ lime juiced, and ½ tsp salt.
- When the shrimp are done marinating, thread them onto skewers.
- Grill the shrimp for 2-3 minutes on each side or until pink. If not using a grill, cook them on the stovetop.
- Serve the shrimp with the mango salsa and a side of brown rice.
