Description

This Grilled Lemon Pepper Chicken is a simple yet flavorful dish that’s perfect for a quick and healthy meal. Tender chicken breasts are marinated in a bright lemon pepper mixture, then grilled to perfection for a delicious and satisfying main course.

Ingredients

Units Scale
  • 2 large boneless, skinless chicken breasts (about 1 pound)
  • 1/3 cup vegetable oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lemon

Instructions

  1. Prepare Chicken: Butterfly or pound chicken breasts to an even thickness.
  2. Marinate: In a bowl or bag, combine vegetable oil, salt, pepper, lemon zest, lemon juice, and Dijon mustard. Add chicken and marinate for 30 minutes to 2 hours.
  3. Preheat Grill: Preheat grill to medium-high heat (375-425°F).
  4. Grill Chicken: Grill chicken for 4-5 minutes per side, or until cooked through (internal temperature of 165°F).
  5. Rest and Serve: Remove from grill and let rest for 5 minutes before serving.

Notes

  • Do not marinate chicken for more than 3 hours, as the lemon juice can make it mushy.
  • Leftover chicken can be refrigerated for 3-4 days.
  • Use a meat thermometer to ensure chicken is cooked through.
