Instructions

  1. Prepare the Marinade: In a large bowl, combine the yogurt, olive oil, garam masala, garlic paste (or minced garlic), ground ginger, crushed red pepper flakes, sea salt, and ground black pepper. Stir well until all the ingredients are thoroughly mixed.
  2. Marinate the Chicken: Add the chicken thighs to the bowl with the marinade. Toss to coat each piece evenly, making sure the yogurt mixture covers all sides. Spoon extra marinade over the top if needed. Cover the bowl and refrigerate for 2-4 hours to allow the flavors to infuse.
  3. Prepare the Grill: When ready to cook, lightly oil the grates of your grill or grill pan. Preheat the grill to medium-high heat (375-450°F) to ensure even cooking and prevent sticking.
  4. Grill the Chicken: Remove the chicken thighs from the marinade, keeping a coating of yogurt on each piece. Place the thighs on the hot grill. Grill for 5-6 minutes per side, or until the chicken is charred on the outside and the internal temperature reaches 165°F. Flip only once for best results.
