Ingredients

Units Scale

Meat & Vegetables

  • 1 lb. ground beef
  • 1 lb. sliced mushrooms

Dairy

  • 2 Tbsp. unsalted butter
  • 6 oz. cream cheese, softened
  • Parmesan cheese, for garnish

Eggs

  • 3 large eggs

Seasonings & Herbs

  • 2 tsp. minced garlic
  • 1 tsp. seasoning salt
  • 2 Tbsp. chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it’s hot and ready for baking.
  2. Brown the Ground Beef: In a skillet over medium-high heat, cook the ground beef with a sprinkle of salt and pepper until fully browned. Drain any excess fat from the skillet and set the beef aside.
  3. Sauté the Mushrooms: In the same skillet, melt 2 tablespoons of unsalted butter over medium heat. Add the sliced mushrooms and sauté until they become tender and release their moisture, about 5-7 minutes.
  4. Add Seasonings: Stir in the minced garlic, seasoning salt, fresh parsley, and extra pepper to taste. Cook for an additional minute until fragrant, then remove from heat.
  5. Prepare Cream Cheese Mixture: In a food processor or blender, combine the softened cream cheese and eggs. Blend until the mixture is completely smooth and homogenous.
  6. Assemble the Casserole: Pour the cream cheese mixture over the cooked ground beef and combine gently. Transfer this beef mixture to the bottom of a well-greased 9×9-inch baking dish, spreading it out evenly.
  7. Add Mushrooms: Evenly spread the sautéed mushrooms over the top of the beef and cream cheese layer.
  8. Bake: Place the dish in the preheated oven and bake for 20 minutes, or until the top is lightly golden and the casserole is set.
  9. Garnish & Serve: Remove the casserole from the oven. Top with grated parmesan cheese and additional chopped parsley if desired. Serve hot and enjoy!

Notes

  • For a richer flavor, use a blend of mushroom varieties such as cremini and portobello.
  • You can prepare this casserole up to a day ahead, cover, and refrigerate before baking.
  • Easily make it low-sodium by omitting seasoning salt and adjusting to taste.
  • Serve alongside a green salad for a balanced meal.
