Instructions
- Make the poppy seed dressing: Whisk together mayonnaise, milk, sugar, apple cider vinegar, and poppy seeds in a small bowl; set aside.
- Cook the bacon: In a large skillet over medium-high heat, cook diced bacon until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate; set aside.
- Prepare the eggs: Place eggs in a saucepan, cover with water, bring to a boil, then cook for 1 minute. Remove from heat, cover, and let sit for 8-10 minutes. Drain, cool, peel, and dice.
- Assemble the salad: In a large bowl, arrange romaine lettuce and top with rows of bacon, eggs, apple, pear, pecans, cranberries, and goat cheese.
- Serve: Drizzle with poppy seed dressing and serve immediately.
