Main Muffin Base:
- 2 large bananas, mashed
- 2 large eggs
- 1/4 cup maple syrup
- 1 cup unsweetened almond milk (or preferred milk)
- 1 teaspoon vanilla extract
Dry Ingredients:
- 2 cups rolled oats
- 1/2 cup ground oat flour*
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
Optional Toppings:
- Blueberry Almond* – Blueberries, Sliced almonds

Instructions
- Preheat the oven to 350ºF and prepare a muffin tin with liners or non-stick spray.
- Mix mashed bananas, eggs, maple syrup, milk, and vanilla in a bowl.
- In a separate bowl, combine dry ingredients.
- Gradually add wet mixture to dry ingredients, mix well.
- Spoon batter into muffin cups, top with desired toppings.
- Bake for 20-23 minutes until a toothpick comes out clean.
- Cool before removing from the tin.
