This Healthy Turkey Shepherd’s Pie is a nutritious, comforting dish featuring lean ground turkey, a medley of vibrant vegetables, and a rich homemade gravy, all topped with creamy, lighter mashed potatoes made with cauliflower and Yukon gold potatoes. Perfect for a wholesome family dinner, it offers a healthier twist on a classic favorite without sacrificing flavor.

Ingredients

Scale

Mashed Potato Topping

  • 1 1/2 lbs Yukon gold potatoes (peeled and cut into 2-inch cubes)
  • 1 large head cauliflower (cut into florets)
  • 1/4 cup plain Greek yogurt
  • 1/2 cup milk
  • 1/4 cup lower sodium chicken broth
  • 2 Tbsp butter
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Turkey Filling

  • 2 Tbsp olive oil (divided)
  • 1 lb ground turkey
  • 1 cup onion (chopped)
  • 2 carrots (peeled and diced small)
  • 2 ribs celery (diced small)
  • 3 cloves garlic (minced)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 Tbsp flour (gluten free suggested)
  • 1 Tbsp tomato paste
  • 1 cup chicken broth
  • 1 Tbsp Worcestershire sauce
  • 2 tsp fresh thyme (chopped)
  • 2 tsp fresh rosemary (chopped)
  • 1/2 cup frozen corn
  • 1/2 cup frozen peas

Instructions

  1. Preheat Oven: Set your oven to 400 degrees Fahrenheit to ensure it reaches the perfect temperature while you prepare the pie.
  2. Prepare Vegetables for Topping: Boil the peeled Yukon gold potatoes and cauliflower florets in a large pot of salted water until tender, about 15-20 minutes. Drain them well.
  3. Mash the Topping: In a large bowl, combine the drained potatoes and cauliflower with plain Greek yogurt, milk, chicken broth, butter, garlic powder, salt, and black pepper. Mash together until smooth and creamy. Adjust seasoning to taste and set aside.
  4. Sauté Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add chopped onion, diced carrots, and celery. Cook until softened and translucent, about 5-7 minutes.
  5. Cook Ground Turkey: Push vegetables to the side, add another tablespoon of olive oil if needed, and add ground turkey to the skillet. Cook until browned and cooked through, breaking it apart as it cooks.
  6. Add Garlic and Seasoning: Stir in the minced garlic, salt, and pepper. Cook for an additional minute until fragrant.
  7. Make the Gravy: Sprinkle flour over the turkey mixture and stir well to combine. Cook for 1-2 minutes to eliminate the raw flour taste. Then add tomato paste, chicken broth, Worcestershire sauce, chopped thyme, and rosemary. Stir continuously until the mixture thickens into a rich gravy.
  8. Add Frozen Vegetables: Fold in the frozen corn and peas. Cook for another 2-3 minutes until heated through. Remove from heat.
  9. Assemble the Pie: Transfer the turkey and vegetable filling into a baking dish, spreading it evenly. Carefully spread the mashed potato and cauliflower topping over the filling, smoothing the surface with a spatula.
  10. Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the topping is slightly golden and the filling is bubbling around the edges.
  11. Serve: Allow the shepherd’s pie to cool for 5 minutes before serving. Enjoy this wholesome and comforting meal with your family!
