  • 16 ounces pork sausage meat, casings removed
  • 1/2 cup yellow onion, chopped
  • 1 clove garlic, minced
  • 2 pounds ground chuck
  • 8 ounces tomato sauce (1 can)
  • 14.5 ounces diced tomatoes (1 can)
  • 1 cup water
  • 15 ounces black beans, drained and rinsed (1 can)
  • 15 ounces red beans, drained and rinsed (1 can)
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Worcestershire sauce
  • 1 ounce chili seasoning (store-bought or homemade)
  • 1/4 cup ketchup
  • 1 tablespoon yellow mustard
  • 1/2 teaspoon kosher salt (or to taste)
  • 1/2 teaspoon ground black pepper

Optional Toppings

  • Chopped onions
  • Hot sauce
  • Sliced jalapeños
  • Shredded cheese
  • Crackers
  • Sour cream
  • Fresh cilantro

Instructions

  1. Prepare the Sausage Mixture:
    Heat a large skillet over medium-high heat. Add the sausage and crumble as it cooks. When it’s almost fully browned, add the onion and garlic. Sauté until the onion turns translucent, about 2-3 minutes. Drain off any excess oil if necessary and set the mixture aside.
  2. Cook the Ground Chuck:
    Place the ground chuck in a Dutch oven and use a wooden utensil to crumble it. Cover the meat completely with water and bring it to a boil. Boil the ground chuck until browned, then drain it in a colander. Return the cooked beef to the Dutch oven.
  3. Combine Ingredients:
    Add the cooked sausage and onion mixture to the ground chuck. Mix in the tomato sauce, diced tomatoes, water, black beans, red beans, apple cider vinegar, Worcestershire sauce, chili seasoning, ketchup, mustard, kosher salt, and black pepper. Stir well until everything is combined.
  4. Simmer the Chili:
    Simmer the chili over medium-low heat, stirring often, for at least 1 hour or until the chili thickens and the flavors meld together. If the chili reduces too much, you can add a small amount of water to adjust the consistency.
  5. Serve and Garnish:
    Serve the chili in bowls with your choice of optional toppings such as chopped onions, shredded cheese, sour cream, crackers, jalapeños, cilantro, or a dash of hot sauce.

Notes

  • If you can’t find ground pork sausage in a roll, use pork sausages and remove their casings.
  • The addition of apple cider vinegar enhances the flavor significantly, so don’t skip it!
