For the Fritters

  • 1 1/2 lbs raw boneless skinless chicken breasts
  • 2 large eggs
  • 1 tablespoon light mayonnaise
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon chopped fresh basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried dill weed
  • 1/3 cup all-purpose flour
  • 4 oz shredded 2% milk Mozzarella cheese (about 1 cup)

  • 2 tablespoons olive oil

Instructions

  1. Prepare the chicken: Place the chicken breasts into the bowl of your food processor and pulse a few times or turn on for a few seconds until the chicken is finely diced. Alternatively, finely dice the chicken breasts by hand.
  2. Mix the ingredients: Transfer the diced chicken to a large mixing bowl. Add eggs, mayonnaise, herbs, salt, garlic powder, pepper, dill, flour, and shredded cheese. Stir until well combined.
  3. Form the fritters: Using a ¼ cup measuring cup, portion out the mixture into 15 evenly sized piles on a plate or baking sheet.
  4. Heat the skillet: Add 1 tablespoon of olive oil to a large skillet or sauté pan and heat over medium heat until hot.
  5. Cook the fritters: Carefully place half of the chicken piles into the hot oil. Flatten each into a patty with the back of a spoon or spatula, ensuring they aren’t touching. Cook for 3-4 minutes until the bottoms are golden, then flip and cook another 3-4 minutes until cooked through. Remove to a serving plate.
  6. Repeat and serve: Add the remaining oil and repeat with the second batch of fritters. Serve warm.
