Instructions
- Prepare Ingredients: Slice 1/4 cup unsalted butter very thin and add to the bottom of a stand mixer bowl along with 1/4 cup granulated sugar and 1 teaspoon kosher salt.
- Warm Milk: Heat 1 1/4 cups whole milk in the microwave in short intervals until it reaches 105-110°F. Pour 1 cup of this warm milk into the mixer bowl with butter, sugar, and salt; no stirring needed.
- Activate Yeast: In the remaining 1/4 cup warm milk, stir in 2 1/4 teaspoons active dry yeast and let sit for about 5 minutes until foamy, indicating the yeast is active.
- Add Yeast Mixture and Egg: Pour the foamy yeast mixture into the mixer bowl. Add the beaten egg and mix to combine.
- Add Flour: Using the dough hook attachment, gradually add 3 1/2 cups all-purpose flour one cup at a time while mixing, scraping down the bowl sides as needed, until a dough forms.
- Knead Dough: Increase mixer speed to medium-high and knead for 3 minutes. If dough sticks to the bowl sides, add flour a little at a time (up to 1/2 cup) until it just pulls away cleanly, though some sticking at the bottom is acceptable.
- First Rise: Coat a large bowl with 1 teaspoon vegetable oil. Transfer the dough to this bowl, turning it to coat in oil. Cover with plastic wrap and let rise in a warm spot for 1-2 hours until doubled in size.
- Prepare Baking Dish: Melt 1/4 cup unsalted butter. Brush a 9×13 inch baking dish lightly with melted butter and set aside.
- Shape Rolls: Punch down the risen dough to release air. Divide dough into 15 equal pieces. Shape each piece into a smooth ball by stretching and tucking ends underneath, then gently roll between your hands.
- Second Rise: Place rolls seam-side down in the prepared baking dish in 3 rows of 5. Cover again with plastic wrap and let rise for about 1 hour until doubled in size.
- Bake: Preheat oven to 350°F (175°C). Remove plastic wrap and bake rolls for 20-25 minutes until tops are golden brown and sound hollow when tapped.
- Finish: Immediately brush the hot rolls with remaining melted butter. Serve warm.
