Instructions

  1. Make the Dough: In a large mixing bowl, combine the flour, sugar, and salt. Mix well, then add the vegetable shortening and warm water. Using your hands, work the ingredients together until a soft, pliable dough forms. If the dough feels too dry, add extra water, 1 tablespoon at a time, until the desired consistency is reached.
  2. Rest the Dough: Shape the dough into a ball, wrap it securely with plastic wrap, and refrigerate for 1 hour. This resting period helps the dough relax and makes it easier to roll out.
  3. Shape the Sopapillas: Unwrap the dough and place it onto a lightly floured surface. Roll it out into a square roughly 1/8-inch thick. Use a sharp knife to cut 4–6 horizontal and 4–6 vertical strips, creating uniform rectangles or squares.
  4. Heat the Oil: Pour enough peanut oil into a non-stick pan to reach 2 inches in depth. Heat the oil over medium-high heat until it reaches 375°F (190°C).
  5. Fry the Sopapillas: Carefully add a few dough pieces to the hot oil. They should rise to the surface and puff up within seconds. Flip each sopapilla once puffed and golden on one side, cooking for an additional 2 minutes or until golden all over. Remove with a slotted spoon and drain on a paper towel–lined plate. Repeat until all are fried.
  6. Dust with Sugar: While still warm, sprinkle the sopapillas generously with confectioners’ sugar. Serve immediately for best taste and texture.
