Chicken
- 400 grams boneless chicken breast or thigh (about 0.88 lb), cut into bite-size cubes
- 1/4 tsp white pepper
- 1 tbsp regular soy sauce
- 1 egg
- 1 cup cornstarch
- Neutral oil for frying
- 1 tbsp toasted sesame seeds
- Spring onions, chopped for garnish
Honey Butter Sauce
- 2-3 cloves garlic, minced
- 4 tbsp honey
- 4 tbsp butter (divided use)
- 1 tbsp brown sugar
- 2 tbsp soy sauce (light or regular)
- 1 tbsp sesame oil
- 2 1/2 tbsp cornstarch slurry (mix 1/2 tsp cornstarch with 2 tbsp water)
- 1 tsp crushed chili (optional)
Instructions
- Prepare the Chicken: Cut the chicken into bite-sized cubes and place them in a bowl. Add the egg, soy sauce, and white pepper, mixing well to combine. Then add cornstarch and thoroughly coat each chicken piece.
- First Fry: Heat neutral oil to 350°F (180°C). Fry the coated chicken pieces for 1-2 minutes until lightly cooked. Remove and let them cool for a few minutes.
- Second Fry: Return the chicken to the hot oil and fry again for 2-3 minutes or until the pieces are crispy and golden brown. Remove and drain excess oil.
- Make the Honey Butter Sauce: Heat a pan over medium heat and melt 2 tablespoons of butter. Add minced garlic and sauté for 1-2 minutes until fragrant. Lower the heat to low, then add soy sauce, honey, brown sugar, the remaining butter, sesame oil, cornstarch slurry, and crushed chili if using. Stir continuously until the sauce thickens and becomes glossy.
- Coat Chicken with Sauce: Add the double-fried chicken pieces to the sauce, tossing and stirring to coat each piece evenly in the honey butter glaze.
- Garnish and Serve: Sprinkle toasted sesame seeds and chopped spring onions over the coated chicken. Serve immediately and enjoy the perfectly crispy, flavorful honey butter fried chicken.
Notes
- Double frying the chicken ensures a crunchy exterior without drying out the inside.
- Maintain medium-high heat during frying and fry in batches to keep the oil temperature consistent.
- Crushed chili is optional; omit it if you prefer a milder sauce.
- For extra nutty flavor and texture, try substituting sesame seeds with pumpkin seeds, toasted walnuts, or roasted crushed peanuts.
