This easy and moist Honey Cake is the perfect treat for any occasion. Made with wholesome ingredients and flavored with aromatic cinnamon and sweet honey, this cake is light, tender, and incredibly delicious. Ingredients

Units Scale
  • Main Ingredients

  • 3/4 cup honey, divided
  • 2 large eggs
  • 1/2 cup vegetable oil or any neutral flavored oil
  • 1 teaspoon vanilla extract
  • 1/2 cup hot water
  • 1 1/4 cups all-purpose flour
  • 1/2 cup light brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Prepare the pan and oven: Preheat your oven to 180°C (350°F) and grease an 8-inch round cake pan to prevent the cake from sticking, ensuring an even bake.
  2. Mix wet ingredients: In a large mixing bowl, whisk together 1/2 cup of the honey, vegetable oil, vanilla extract, and eggs until the mixture is well blended. Pour in the hot water and continue whisking until fully combined.
  3. Add dry ingredients: Sift in the all-purpose flour, light brown sugar, baking powder, baking soda, salt, and cinnamon into the wet mixture. Gently mix until everything is fully incorporated and no dry spots remain. Avoid over-mixing for a tender cake.
  4. Bake the cake: Pour the batter into the prepared cake pan, smoothing the top with a spatula. Place the pan in the preheated oven and bake for 28-30 minutes, or until a toothpick inserted into the center comes out clean.
  5. Drizzle with honey: Remove the cake from the oven and immediately drizzle the remaining 1/4 cup honey evenly over the top to soak in while the cake is still warm, enhancing its flavor and moisture.
  6. Cool and serve: Allow the cake to cool completely in the pan before slicing and serving. This helps ensure clean slices and allows the honey topping to fully absorb.

Notes

  • For best storage, do not drizzle the remaining honey over the cake until ready to serve. Let the cake cool, then wrap whole or slice and store in airtight containers or plastic wrap.
  • Refrigerate leftovers for up to 5 days for optimal freshness.
  • Freeze the undrizzled cake or individual slices tightly wrapped for up to 3 months. Thaw before serving and drizzle with honey if desired.
  • For added flavor, consider adding a touch of orange zest to the batter.
