Description

  • 3/4 cup rolled oats

Cottage Cheese

  • 1/2 cup cottage cheese (unsweetened)

Eggs

  • 3 eggs

Instructions

  1. Blend Rolled Oats: Add ¾ cup rolled oats to a blender and blend until a flour consistency forms.
  2. Add Eggs and Cottage Cheese: Add 3 eggs and ½ cup cottage cheese to the blender. Blend until smooth. Let the mixture sit for 5-10 minutes to allow the oats to rehydrate and the batter to thicken.
  3. Cook Pancakes: Heat a non-stick skillet over low to medium heat. Pour about ⅓ cup of batter onto the skillet. Cook for 2-3 minutes on the first side, then flip and cook for another 1-2 minutes or until golden brown. Repeat with remaining batter.
  4. Enjoy: Serve the pancakes warm and enjoy!
