Ingredients

Units Scale

Meat and Vegetables

  • 1/2 onion, diced
  • 1 lb. ground beef
  • 1 1/2 cups mixed veggies (peas and carrots)

Other Ingredients

  • 15 oz diced tomatoes, canned
  • 3/4 cup white rice
  • 2 cups beef broth
  • 1 tsp dried oregano
  • 1 tsp garlic salt
  • 1/2 tsp dried basil
  • 1/2 tsp pepper
  • 1 1/2 cups mozzarella cheese

Instructions

  1. Brown the beef and onion: In a large skillet, cook the ground beef and diced onion over medium heat until the beef is no longer pink, about 5-7 minutes. Drain any excess fat from the skillet.
  2. Add remaining ingredients and simmer: Return the skillet to the stovetop and stir in the canned diced tomatoes, mixed vegetables, rice, beef broth, dried oregano, garlic salt, dried basil, and pepper. Mix everything well and bring the mixture to a light boil.
  3. Cook the rice: Reduce heat to low, cover the skillet, and let it simmer for about 17 minutes or until the rice is tender and has absorbed most of the liquid.
  4. Top with cheese and melt: Fluff the rice mixture gently with a fork. Sprinkle the mozzarella cheese evenly over the top. Cover the skillet again and cook for an additional 3 minutes to allow the cheese to melt.
  5. Serve and garnish: Optionally, sprinkle with fresh parsley for added color and flavor. Serve hot and enjoy your satisfying Italian Beef and Rice Skillet.

Notes

  • You can substitute 1 cup of small pasta (such as shells or macaroni) instead of rice for a different texture.
  • Drain excess fat after browning the beef to reduce greasiness.
  • For a spicier kick, add red pepper flakes or Italian seasoning blend.
  • Use low-sodium beef broth to control sodium levels if preferred.
