For the Chicken

  • 2 lbs Chicken Breasts
  • 2 tbsp Oil
  • 1/2 tsp Salt
  • 1/8 tsp Pepper

For the Pasta

  • 1/2 lb Penne Pasta

For the Sauce

  • 2 tbsp Butter
  • 2 Garlic Cloves, minced
  • 3 C Baby Spinach
  • 8 oz Sun-dried Tomatoes, drained and sliced
  • 3 C Heavy Cream
  • 1/2 C Parmesan cheese, grated
  • 1 tsp Italian Seasoning

Instructions

  1. Prepare the Chicken: Season the chicken breasts on both sides with salt and pepper. Heat oil in a large skillet over medium-high heat, and add the chicken. Cook until both sides are browned and the center is no longer pink, about 6-8 minutes per side depending on thickness. Once cooked, remove chicken from the pan, slice into cubes, and set aside.
  2. Cook the Pasta: While the chicken is cooking, bring a large pot of salted water to a boil. Add penne pasta and cook according to package instructions until al dente. Drain well and set aside.
  3. Prepare the Sauce: In the same skillet used for the chicken, melt butter over medium heat. Add the sun-dried tomatoes, minced garlic, and baby spinach. Sauté for 2-3 minutes until the spinach is wilted and tomatoes are softened.
  4. Add Cream and Seasoning: Pour in the heavy cream, Italian seasoning, and stir to combine. Simmer the mixture for a few minutes, allowing the sauce to slightly thicken. Add in the grated Parmesan cheese and mix until smooth and creamy.
  5. Combine Pasta, Chicken, and Sauce: Add the cooked pasta and cubed chicken to the sauce. Stir well to coat evenly and heat through for 1-2 minutes.
  6. Serve: Spoon the creamy Tuscan chicken pasta into bowls. Top with extra Parmesan if desired and serve immediately. Enjoy!
