For the Chicken:

  • 2 pounds boneless skinless chicken thighs, fat removed, cut into 1-inch pieces
  • 1/4 cup (32 g) cornstarch
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons extra virgin olive oil

For the Sauce:

  • 1/3 cup (85 g) soy sauce
  • 1/3 cup (83 g) water
  • 1/3 cup (67 g) light brown sugar, packed
  • 1 teaspoon sesame oil
  • 2 teaspoons garlic, minced
  • 1/2 yellow onion, diced
  • 2 large jalapeno peppers, sliced into thin rounds
  • sesame seeds, for garnish
  • cooked white rice, for serving

Instructions

  1. Prepare the Chicken: In a large bowl, coat chicken pieces with cornstarch, salt, and pepper. Set aside.
  2. Make the Sauce: Combine water, soy sauce, brown sugar, sesame oil, and garlic in a bowl. Set aside.
  3. Cook the Chicken: In a skillet, cook chicken until browned and cooked through. Remove and keep warm.
  4. Cook the Vegetables: In the same skillet, cook onions and jalapenos until softened.
  5. Combine and Serve: Add chicken and sauce to the skillet. Cook briefly, then serve over rice garnished with sesame seeds.

Notes

  • Air Fryer Option: Coat chicken in cornstarch and air fry at 400°F for 10 minutes.
  • Set cooked chicken aside while preparing sauce and vegetables.
