Description

Delightfully sweet and caramelized, these Maple Roasted Sweet Potatoes are the perfect autumn side dish. Cubed sweet potatoes are tossed with coconut oil, real maple syrup, and cinnamon, then roasted until tender with crispy, caramelized edges bursting with flavor.

Ingredients

Scale

Sweet Potatoes

  • 3 medium to large sweet potatoes, cut into 1/2 inch cubes

Other Ingredients

  • 1 1/2 tablespoons coconut oil
  • 3 tablespoons real maple syrup
  • 1 teaspoon cinnamon
  • Kosher salt, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for roasting the sweet potatoes.
  2. Toss Ingredients: In a large bowl or directly on a baking sheet, combine the cubed sweet potatoes with coconut oil, maple syrup, and cinnamon, making sure each piece is evenly coated.
  3. Arrange on Baking Sheet: Spread the coated sweet potatoes out in a single layer on the baking sheet. Use two sheets if needed to avoid overcrowding. Sprinkle kosher salt over the potatoes.
  4. First Bake: Bake the sweet potatoes for 15 minutes. After this time, stir the potatoes and rotate the pans if you are using more than one to ensure even cooking.
  5. Final Bake: Continue baking for an additional 10 to 20 minutes, or until the sweet potatoes are deeply browned and caramelized on the edges. Smaller cubes will cook faster while larger cubes require more time. For maximum flavor, allow some pieces to develop crispy, caramelized edges even past tender.

Notes

  • This recipe is incredibly simple yet packed with delicious, warm autumn flavors.
  • These sweet potatoes make an ideal side dish for fall and winter meals.
  • Adjust the baking time depending on the size of your sweet potato cubes for perfect caramelization.
