Instructions

  3. Sear the chicken: Heat the extra virgin olive oil in a large cast iron skillet over medium-high heat. Once hot, sear the chicken breasts for a few minutes on each side until golden brown. Pour in the dry white wine and continue to cook, allowing the wine to reduce by half to concentrate the flavors.
  4. Braise the chicken: Add the lemon juice and chicken broth to the skillet. Sprinkle the remaining dried oregano evenly over the chicken. Reduce the heat to medium, cover the skillet tightly with a lid or foil, and let the chicken cook undisturbed for 5 to 6 minutes. Flip the chicken breasts and continue braising for an additional 5 to 6 minutes, or until the internal temperature reaches 165°F, ensuring the chicken is fully cooked and tender.
  5. Finish the chicken and serve: Remove the cover and evenly distribute the chopped red onions, diced tomatoes, and sliced green olives over the chicken. Cover again and cook for 3 more minutes to allow the vegetables to soften and flavors to meld. Remove from heat, garnish with freshly chopped parsley and crumbled feta cheese if desired.
