- 24 egg roll wrappers
- 1/4 cup butter, melted
Instructions
- Preheat: Preheat oven to 425°F (220°C) or air fryer according to manufacturer’s instructions.
- Cook Chicken: Heat olive oil in a large skillet over medium heat. Add chicken, cumin, chili powder, and cayenne pepper. Cook, stirring occasionally, until chicken is cooked through.
- Add Vegetables and Salsa: Add bell pepper, corn, kale, and salsa to the skillet. Cook until peppers are tender. Stir in green onions, parsley, salt, and pepper.
- Assemble Egg Rolls: Place a heaping tablespoon of the chicken mixture in the center of each egg roll wrapper. Brush edges with water and fold according to package instructions.
- Bake or Air Fry:
- Baking: Place egg rolls on a parchment-lined baking sheet and brush with melted butter. Bake for 15 minutes, or until golden brown.
- Air Frying: Place egg rolls in the air fryer basket in a single layer. Air fry at 400°F (200°C) for 10-12 minutes, or until golden and crispy, flipping halfway through.
