Description

These Mexican Chicken Egg Rolls are a delicious fusion of flavors, combining savory chicken, zesty spices, and fresh vegetables in a crispy, golden-brown wrapper. Perfect as an appetizer, snack, or a fun twist on Taco Tuesday!

Ingredients

Units Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into small pieces
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 1 medium red bell pepper, chopped into small pieces
  • 1 cup frozen corn
  • 2 cups kale, roughly chopped
  • 1 cup salsa
  • 6 green onions, chopped
  • 1/4 cup parsley, chopped
  • Salt and pepper to taste
  • 24 egg roll wrappers
  • 1/4 cup butter, melted

Instructions

  1. Preheat: Preheat oven to 425°F (220°C) or air fryer according to manufacturer’s instructions.
  2. Cook Chicken: Heat olive oil in a large skillet over medium heat. Add chicken, cumin, chili powder, and cayenne pepper. Cook, stirring occasionally, until chicken is cooked through.
  3. Add Vegetables and Salsa: Add bell pepper, corn, kale, and salsa to the skillet. Cook until peppers are tender. Stir in green onions, parsley, salt, and pepper.
  4. Assemble Egg Rolls: Place a heaping tablespoon of the chicken mixture in the center of each egg roll wrapper. Brush edges with water and fold according to package instructions.
  5. Bake or Air Fry:
    • Baking: Place egg rolls on a parchment-lined baking sheet and brush with melted butter. Bake for 15 minutes, or until golden brown.
    • Air Frying: Place egg rolls in the air fryer basket in a single layer. Air fry at 400°F (200°C) for 10-12 minutes, or until golden and crispy, flipping halfway through.
  6. Serve: Serve hot with your favorite salsa.

Notes

  • Flavor Boost: Add cheese or sour cream to the filling before wrapping.
  • Crispy Texture: Brush egg rolls with melted butter before baking for a golden, crispy finish.
  • Spice Level: Adjust chili powder or cayenne pepper to your preference.
  • Vegetarian: Omit chicken and use vegetable broth for a vegetarian version.
  • Reheating: Reheat leftovers in the oven or air fryer for a crispy texture, or microwave for a softer texture.
