- 3 cups all-purpose flour
- 1 3/4 teaspoons salt
- 1/2 teaspoon active dry yeast
- 1 1/2 cups water (110°F to 115°F)
Instructions
- Form the Dough: In a large bowl, combine flour, salt, and yeast. Add water and mix until well combined.
- Rise: Cover the bowl with plastic wrap and let it sit at room temperature for 12-24 hours.
- Preheat and Heat Pot: Preheat oven to 450°F with a cast iron pot inside.
- Shape Dough: Flour your hands and gently shape the dough into a ball. Place the dough in the heated pot.
- Bake: Cover and bake for 30 minutes. Remove the lid and bake for another 15-20 minutes, or until golden brown. Let cool completely before slicing.
Notes
- Use a small (3.5 qt) Dutch oven for best results.
- If the dough is too dry, add a little more water.
- Add extra ingredients like dried fruit, seeds, or cheese in step 1.
- For chewy bread, ensure adequate gluten formation (12-hour rise) and use high-protein flour.
- For dense bread, avoid adding too much flour.
- If you don’t have a Dutch oven, use a covered metal pot that can withstand high heat.
- The bread is done when the bottom sounds hollow when tapped or reaches an internal temperature of 200°F.
