20 ozGround Mild Italian Sausage:
1 lbOlive Oil:
2 TBSPRed Onion, diced:
1/2Garlic Cloves, minced:
2 largeBaby Spinach, ribboned or torn:
4 cupsChicken Broth:
1 cup, more if neededSea Salt:

- Heat the oil: Heat the oil in a skillet over medium-high heat. Add the onions and sauté until softened.
- Add garlic and sausage: Add the garlic and sausage to the skillet, cook until the sausage is mostly browned.
- Add broth and tortellini: Stir in the broth, add the tortellini, simmer gently, cover, and cook for 4 minutes.
- Stir in spinach and cheese: Add spinach, cheese, and lemon zest. Cook for another minute.
- Finish and serve: Remove from heat, add lemon juice, pepper, and extra cheese if desired. Serve hot.
