Ingredients
Scale
Main Ingredients
- 1 1/2 lbs ground beef
- 1 onion, diced
- 4 cloves garlic, crushed
- 2 cans kidney beans, drained and rinsed
- 1 28-ounce can diced tomatoes
- 1 6-ounce can tomato paste
- 1 4.5-ounce can green chilies
- 3 cups chicken broth (or water with 2 teaspoons chicken bouillon powder)
Spices
- 2 Tbsp chili powder
- 1/2 tsp salt
- 2 tsp cumin
- 1 tsp dried oregano
- 1/4 tsp cayenne pepper
- 1 tsp hot sauce
- 1 tsp sugar
Instructions
- Brown the Beef: In a large pot over medium heat, cook the ground beef until browned. Drain the excess fat to reduce greasiness and keep the chili hearty but not oily.
- Sauté Aromatics: Add the diced onion and crushed garlic to the same pot with the beef. Sauté until the onion becomes soft and translucent, releasing a fragrant base for the chili.
- Add Spices and Other Ingredients: Stir in all the spices including chili powder, salt, cumin, oregano, cayenne pepper, hot sauce, and sugar. Then add the kidney beans, green chilies, tomato paste, diced tomatoes, and chicken broth to the pot.
- Simmer the Chili: Bring the chili mixture to a boil over high heat. Once boiling, reduce the heat to medium-low and let it simmer uncovered for 30 minutes so the flavors meld and the chili thickens.
- Serve: Garnish the chili with shredded cheddar cheese and sour cream. Serve hot with cornbread on the side for a classic, comforting meal.

- Feel free to substitute chicken broth with water and chicken bouillon powder for a similar flavor.
