Description

This One Pot Creamy Cajun Chicken Pasta is a flavorful and comforting dish that is quick and easy to make. Tender chicken is coated in a homemade Cajun seasoning and combined with pasta, fire-roasted tomatoes, and cream cheese for a creamy and spicy sauce.

  • 1/4 tsp salt

Chicken Pasta

  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 lb. boneless, skinless chicken breast
  • 1 yellow onion, diced
  • 1/2 lb. penne pasta (uncooked)
  • 15 oz. fire-roasted diced tomatoes
  • 2 cups chicken broth
  • 2 oz. cream cheese
  • 3 green onions, sliced

Instructions

  1. Cajun Seasoning: Combine the ingredients for the Cajun seasoning in a small bowl. Cut the chicken into cubes, coat with seasoning.
  2. Cook Chicken: Sauté seasoned chicken in olive oil and butter until colored.
  3. Add Onion: Sauté diced onion until soft.
  4. Cook Pasta: Add pasta, tomatoes, and broth. Simmer until pasta is tender.
  5. Finish Dish: Stir in cream cheese until melted. Top with green onions and serve.

  • The deep skillet should be a 4-quart capacity.
