Secret Sauce:
- 1/4 cup mayonnaise
- 2 tablespoons ketchup

Patty Melts:
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 12 ounces 85/15 ground beef
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Worcestershire sauce
- 8 slices rye bread
- 3 tablespoons unsalted butter
- 4 slices Swiss cheese
- 4 slices cheddar cheese
Instructions
Secret Sauce:
- Combine Ingredients: In a bowl, mix mayonnaise, ketchup, mustard, pickle juice, paprika, and garlic powder until smooth. Set aside.
Patty Melts:
- Caramelize Onions: Heat olive oil in a skillet over medium-low heat. Add onions and cook until softened and deeply caramelized, about 30 minutes or more. Add a splash of water if they start to burn. Remove and set aside.
- Form Patties: In a bowl, combine ground beef, salt, pepper, and Worcestershire sauce. Form into four thin, oblong patties.
- Cook Patties: Cook patties in a skillet over medium heat until browned on both sides. Remove and set aside. Wipe excess grease from the pan.
- Assemble Sandwiches: Butter one side of each bread slice. In the skillet, layer sandwiches: bread (buttered side down), Swiss cheese, beef patty, caramelized onions, secret sauce, cheddar cheese, and bread (buttered side up).
- Cook Sandwiches: Cook until golden brown on the bottom, flip, and cook until golden brown on the other side (1-2 minutes per side).
