Base:

  • 10 tablespoons unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 & 2/3 cups all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Filling:

  • 1 pound + 6 ounces peaches, sliced (peeling is optional)
  • 3 tablespoons granulated sugar
  • Zest of 1 lemon

Crumble:

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 6 tablespoons unsalted butter, softened
  • 1/4 teaspoon salt

Instructions

  1. Prepare the baking dish
    Grease and line a 9″ x 13” baking dish with parchment paper and set it aside. Preheat the oven to 350°F.
  2. Prepare the base
    In a large bowl, beat the butter, sugar, and egg using a stand mixer or handheld mixer on medium-high speed for about 3 minutes until the mixture is creamy and light. Gradually add the flour, cinnamon, and salt. Mix on low speed until just combined, being careful not to overmix. Press the crust mixture evenly into your prepared pan by dolloping and spreading it with your fingertips. Chill the pan in the fridge.
  3. Prepare the peach filling
    In another bowl, gently combine the sliced peaches with the sugar and lemon zest. Stir until the peaches are evenly coated, then set the mixture aside.
  4. Prepare the crumble topping
    In a medium bowl, mix the flour, brown sugar, butter, and salt on low speed until the mixture resembles small crumbs. For larger crumbles, gently toss the mixture with your fingers until the crumbs form pea-sized pieces.
  5. Assemble the layers
    Remove the chilled base from the fridge. Spread the peach filling evenly over the crust. Sprinkle the crumble topping over the peaches, ensuring an even layer without pressing it down.
  6. Bake and cool
    Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the crumble topping turns golden brown and the peach juices bubble slightly at the edges. Let the bars cool in the pan on a wire rack for at least 20 minutes before removing. Allow them to cool completely before cutting into bars and serving.
