Description

Philly Cheesesteak Sloppy Joes combine all the flavors of the classic Philly cheesesteak—tender beef, sautéed onions, peppers, mushrooms, and melty provolone—served up in an easy, family-friendly sloppy joe style on brioche buns. A quick, flavorful weeknight dinner everyone will love.

  • 1 lb. lean ground beef (96/4)
  • 1 medium onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 8 oz Baby Bella mushrooms, stem removed and thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp. salt
  • 1/2 tsp. freshly ground black pepper

Sauce

  • 1 cup beef broth
  • 2 Tbsp. ketchup
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. arrowroot powder (or cornstarch)

For Serving

  • 4 slices thin-sliced Provolone cheese
  • 4 Brioche hamburger buns

Instructions

  1. Brown the Beef: Heat a large skillet over medium heat. Add the ground beef, breaking it into pieces with a spatula, and cook until browned and no longer pink.
  2. Sauté Vegetables: Add the chopped onion, green bell pepper, mushrooms, and minced garlic to the skillet. Stir well and cook until the vegetables are softened, about 5–7 minutes. Season with salt and pepper.
  3. Make Sloppy Joe Sauce: In a small bowl, whisk together the beef broth, ketchup, Worcestershire sauce, and arrowroot powder (or cornstarch) until no lumps remain.
  4. Simmer: Pour the sauce mixture over the beef and vegetables. Stir to combine, reduce the heat to low, cover the skillet, and simmer for about 20 minutes, stirring occasionally. The mixture should thicken slightly.
  5. Prepare Buns: Preheat your oven’s broiler. Open the hamburger buns and place them on a baking sheet, cut side up. Optionally, toast them before adding the filling for a crisper texture.
  6. Assemble Sandwiches: Once the beef mixture is done simmering, divide it evenly among the bottom halves of the buns. Top each with a slice of provolone cheese.
  7. Melt Cheese: Place the pan under the broiler just until the cheese is melted and bubbly, about 2–3 minutes. Watch closely to avoid burning.
  8. Finish & Serve: Remove from the oven, add the top half of each bun, and serve warm.

  • Each assembled burger with bun and cheese has about 385 calories. The mix alone without cheese or buns is 195 calories per serving (26g protein/11g carbs/5g fat).
  • Recipe can be easily doubled to serve more people.
  • Add hot sauce or jalapeño slices for extra heat.
  • If using higher fat beef, drain the excess fat after browning.
  • If sauce is too thin, add a little more arrowroot powder mixed with water and simmer until desired thickness is reached.
