Description

These Pretzel-Crusted Chicken Bites are a crispy and flavorful appetizer or snack that’s perfect for any occasion. Made with bite-sized pieces of chicken coated in a crunchy pretzel crust, they’re easy to make and even easier to enjoy!


Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts or tenders
  • 1/2 cup whole wheat flour or all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 large eggs
  • 1 1/2 cups finely crushed pretzels (or more as needed)
  • Nonstick cooking spray

Instructions

  1. Preheat and Prep: Preheat oven to 400°F (204°C). Line a baking sheet with a silicone baking mat or grease with nonstick spray.
  2. Prepare Chicken: If using chicken breasts, pound to an even thickness and cut into 1-1.5 inch pieces. If using chicken tenders, simply cut into 1-1.5 inch pieces.
  3. Bread Chicken: Set up a breading station with three shallow dishes: one with flour mixed with salt and pepper, one with beaten eggs, and one with crushed pretzels. Coat each chicken piece in flour, then dip in egg, and finally coat in pretzels. Place breaded chicken bites on the prepared baking sheet and lightly spray with nonstick cooking spray.
  4. Bake: Bake for 8 minutes, then flip each piece and bake for another 6-8 minutes, or until golden brown and cooked through.
  5. Serve: Serve warm with toothpicks, honey mustard, or your favorite dipping sauce.

Notes

  • Freezing Instructions: Baked chicken bites can be frozen for up to 2-3 months. Reheat in a 350°F oven for 20 minutes, or until heated through.
  • Larger Batch: This recipe can be easily doubled or tripled.
  • Leftovers can be stored in the refrigerator for up to 2 days.
