Description

These delightful Rice Krispie Bird Nests are a fun and festive treat perfect for springtime or Easter celebrations. Made with buttery, gooey marshmallows and crispy cereal, these nests are topped with sweetened shredded coconut dyed green and adorable candy eggs. A whimsical dessert that’s easy to make and bound to impress kids and adults alike!

For the Nests

  • 4 Tbsp unsalted butter
  • 10 oz marshmallows (mini or regular)
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 5 cups Rice Krispies cereal

For Decoration

  • 1 cup sweetened shredded coconut
  • 34 drops green food coloring
  • 48 candy robin eggs (mini)

Instructions

  1. Prepare the Muffin Pan
    Spray two muffin pans with baking spray to prevent sticking and set them aside. These will be used to shape the bird nests.
  2. Make the Marshmallow Mixture
    In a large pot or Dutch oven over medium-low heat, melt the butter completely. Add the marshmallows and cook until they are fully melted and combined with the butter. Stir until smooth, then remove the pot from the heat. Mix in the vanilla extract and salt for added flavor.
  3. Combine Marshmallows and Cereal
    Gradually fold the Rice Krispies cereal into the marshmallow mixture until evenly coated. Ensure every piece is well covered for the best texture.
  4. Shape the Nests
    Scoop a heaping ¼ cup of the sticky cereal mixture into 16 muffin cups. Using a 1-tablespoon measuring spoon or your fingertips, gently press down in the center of each portion to create the nest shape. Let them set in the pans for about 1 hour to firm up.
  5. Color the Shredded Coconut
    Place the sweetened shredded coconut in a resealable plastic bag. Add 3–4 drops of green food coloring and shake vigorously until the coconut is evenly dyed green. This will act as the “grass” in your nests.
  6. Decorate the Nests
    Once the nests have set, transfer them to a serving platter. Add about 1 tablespoon of green coconut to the center of each nest. Top with three candy robin eggs for a charming, festive look. Serve and enjoy!

Notes

  • To save time, you can prepare the coconut coloring while the nests are setting.
  • Use a non-stick spatula to mix the cereal with the marshmallow mixture to prevent sticking.
  • For a nutty twist, sprinkle crushed pecans or almonds along with the coconut.
  • Store the bird nests in an airtight container at room temperature for up to 3 days. Avoid refrigerating as it can make the treats too firm to enjoy.
