- 1 head garlic
- 1 tablespoon olive oil
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
- Parsley or chives, chopped, for garnish
Instructions
- Roast the Garlic: Preheat oven to 400°F. Slice off the top of the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-40 minutes.
- Prepare the Garlic: Once roasted, squeeze the softened garlic cloves out of their skins into a bowl.
- Mash the Garlic: Mash the roasted garlic with a fork until smooth.
- Make the Aioli: In a separate bowl, combine mashed garlic, mayonnaise, lemon juice, and Dijon mustard. Stir until well blended. Season with salt and pepper.
- Garnish and Chill: Garnish with chopped parsley or chives. Refrigerate for at least 30 minutes to allow flavors to meld.

- Roast extra garlic cloves for use in other dishes.
- Use a food processor or blender for a smoother aioli.
- Thin the aioli with water or lemon juice if needed.
- The aioli will thicken upon chilling.
