Description

This Roasted Garlic Aioli is a creamy and flavorful dip with a hint of sweetness from the roasted garlic. Perfect for dipping vegetables, spreading on sandwiches, or serving with grilled meats.


Ingredients

  • 1 head garlic
  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Parsley or chives, chopped, for garnish

Instructions

  1. Roast the Garlic: Preheat oven to 400°F. Slice off the top of the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-40 minutes.
  2. Prepare the Garlic: Once roasted, squeeze the softened garlic cloves out of their skins into a bowl.
  3. Mash the Garlic: Mash the roasted garlic with a fork until smooth.
  4. Make the Aioli: In a separate bowl, combine mashed garlic, mayonnaise, lemon juice, and Dijon mustard. Stir until well blended. Season with salt and pepper.
  5. Garnish and Chill: Garnish with chopped parsley or chives. Refrigerate for at least 30 minutes to allow flavors to meld.

Notes

  • Roast extra garlic cloves for use in other dishes.
  • Use a food processor or blender for a smoother aioli.
  • Thin the aioli with water or lemon juice if needed.
  • The aioli will thicken upon chilling.
  • Customize the flavor with smoked paprika or honey.
