Ingredients
Scale
Meat
- 2 pounds pork sausage
Egg Mixture
- 12 eggs
- 1 cup sour cream (light or regular) (240 g)
- 1/4 cup milk (60 ml)
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 2 cups shredded cheddar cheese (200 g)
Vegetables
- 4 green onions
- 1/2 green bell pepper, diced
- 1/2 red bell pepper, diced
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350 degrees Fahrenheit. Lightly spray a 9×13-inch baking pan with cooking spray to prevent sticking.
- Mix Egg Base: In a large bowl, combine the eggs, sour cream, milk, shredded cheddar cheese, kosher salt, and ground black pepper. Use an electric mixer on low speed and mix just until everything is evenly combined.
- Cook Sausage: Heat a large skillet over medium heat. Add the pork sausage and cook until browned, breaking it up into small pieces with a wooden spoon as it cooks. Once cooked, drain most of the grease and transfer the sausage to the bowl with the egg mixture.
- Sauté Vegetables: In the same skillet used for the sausage, add the diced green and red bell peppers along with the chopped green onions. Sauté for 2 to 3 minutes until the vegetables are slightly softened. Add the sautéed vegetables to the egg and sausage mixture and stir until fully combined.
- Bake the Casserole: Pour the combined mixture evenly into the greased 9×13-inch baking pan. Bake in the preheated oven for 35 to 50 minutes, or until the edges are set and the center is just barely jiggly, indicating it is cooked through but still moist.
- Cool and Serve: Remove from oven and allow the bake to cool slightly before slicing. This Breakfast Bake can be served warm and enjoyed fresh.
- Storage and Reheating: Store any leftovers in the refrigerator and consume within 3 to 4 days. Reheat portions in the microwave for a quick and satisfying meal.
