Description

These Shredded Beef Tacos with Chipotle Honey Sauce & Pickled Onions are a delicious and flavorful twist on traditional tacos. Tender shredded beef, tangy pickled onions, and a creamy chipotle honey lime sauce come together to create a mouthwatering taco experience.

Shredded Beef:

  • 3 lbs chuck roast
  • 2 onions thinly sliced
  • 1 tbsp chipotle powder
  • 1 tbsp garlic powder
  • 1 tbsp oregano
  • 1 tbsp ground cumin
  • 1 tbsp paprika
  • 1 tsp salt
  • 1/2 cup orange juice
  • 1 tbsp lime juice
  • 1/2 cup beef stock

Chipotle Honey Lime Sauce:

  • 1 tbsp honey
  • 1 tbsp chipotle in adobo
  • 1/2 cup mayonnaise
  • 1 tsp lime juice

Pickled Onions:

  • 1/3 cup apple cider vinegar
  • 2 tbsp water
  • 2 tsp honey
  • 1 medium-sized red onion

Tacos:

  • 1 head romaine lettuce finely shredded
  • 68 small flour tortillas
  • 1/3 cup crumbled cotija cheese (or feta)

Instructions

  1. Preheat the oven to 350 degrees: In a small bowl, combine chipotle powder, paprika, oregano, cumin, garlic powder, and salt. Coat the chuck roast with the spice mix.
  2. Cook the beef: Arrange onions in a pot, add orange juice, lime juice, and beef stock. Place the seasoned roast on top, cover, and cook in the oven for 3-3 1/2 hours.
  3. Prepare pickled onions: Slice the red onion thinly. Mix apple cider vinegar, honey, and water, then add the onion slices. Refrigerate for 2-3 hours.
  4. Make the chipotle honey lime sauce: Blend mayo, honey, lime juice, and chipotle in adobo until smooth.
  5. Shred the beef: Use forks to shred the cooked beef. Coat it in the sauce and onions, then broil for a few minutes.
  6. Assemble the tacos: Warm tortillas, fill with lettuce, shredded beef, pickled onions, sauce, and cotija cheese.

  • You can customize these tacos with additional toppings like avocado, salsa, or hot sauce.
