Instructions
- Make the sauce: In a small bowl, whisk together the oyster sauce, soy sauce, and 1 tablespoon sugar until well combined, then set aside.
- Caramelize the onions: Heat 1 tablespoon avocado oil in a large wok or skillet over medium heat. Add the thinly sliced onions, ¼ teaspoon salt, and a pinch of sugar. Cook, stirring occasionally, for about 25 minutes until the onions are deeply golden brown and caramelized.
- Cook the noodles: While the onions are cooking, bring a large pot of salted water to a boil. Add the Lo Mein noodles (or spaghetti) and cook according to package instructions until al dente. Drain the noodles, rinse under cold water to stop cooking, and set aside.
- Cook the shrimp and garlic: Using the same wok, add the raw shrimp and minced garlic. Cook for 3 to 4 minutes over medium heat until the shrimp are just cooked through and curled. Transfer the onion, shrimp, and garlic mixture to a plate and set aside.
- Stir-fry vegetables: Add the remaining tablespoon of avocado oil to the wok. Stir-fry the bok choy and carrots for 2 minutes. Pour in the vegetable broth, cover the wok, and cook for an additional 2 minutes until the vegetables are crisp-tender.
- Combine and finish: Add the drained noodles, shrimp and onion mixture, prepared sauce, and black pepper to the wok. Stir-fry everything together for 2 minutes, allowing the noodles to absorb some of the sauce.
- Garnish and serve: Remove from heat, garnish with the thinly sliced green onions, and serve immediately for a delicious homemade Shrimp Lo Mein.
