- 1 teaspoon dried parsley
- 1 teaspoon minced garlic
- ½ teaspoon dried thyme
- ¾ teaspoon salt
- ¼ teaspoon pepper
Protein
- 2 boneless skinless chicken breasts (about 1 lb)
Liquids & Dairy
- 4 cups low sodium chicken broth
- ¾ cup heavy cream
- ¼ cup grated Parmesan cheese
Other
- 1 tablespoon corn starch
- 3 cups small gnocchi (500g)
Instructions
- Prepare the slow cooker: Line a 4-6 quart slow cooker with one Reynolds Kitchens® Slow Cooker Liner for easy clean up.
- Add vegetables and seasonings: Place celery, carrots, onion, dried parsley, minced garlic, dried thyme, salt, pepper, and chicken broth into the slow cooker. Stir to combine all ingredients well.
- Add chicken: Place the chicken breasts in the slow cooker, pressing them down into the liquid so they are submerged.
- Cook the soup: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours until the vegetables are tender and the chicken is thoroughly cooked.
- Shred the chicken: Carefully shred the cooked chicken inside the slow cooker using two forks, or remove the chicken to a cutting board to chop into bite-sized pieces before returning it to the soup.
- Thicken the soup and add gnocchi: Whisk together the heavy cream and corn starch until smooth. Stir this mixture along with the gnocchi into the soup. Cover and continue cooking on high for 1 hour until the gnocchi is tender and the broth thickens slightly.
- Add spinach and cheese: Stir in the fresh chopped spinach and grated Parmesan cheese. Adjust the seasoning to taste with additional salt and pepper if needed.
- Serve: Ladle the soup into bowls and enjoy hot. The soup pairs wonderfully with crusty bread for a complete comforting meal.
Notes
- This soup is thick, creamy, and packed with tender chicken and fresh vegetables, making it perfect for a nourishing meal.
- Using a slow cooker liner dramatically simplifies cleanup after cooking.
- For a lighter option, substitute heavy cream with half-and-half, but this will alter the soup’s creaminess slightly.
- Feel free to add other vegetables like peas or mushrooms for variation.
- Serve with crusty bread or garlic toast for a heartier meal.
