Description

A hearty and creamy Slow Cooker Chicken Gnocchi Soup made with tender chicken breasts, fresh vegetables, and soft gnocchi. This comforting soup is infused with Parmesan cheese and spinach, perfect for a cozy meal that’s easy to prepare and full of flavor.

Ingredients

Scale

Vegetables

  • 2 ribs celery, chopped
  • 1 large carrot, peeled and chopped
  • ½ medium onion, finely chopped
  • 1 ½ cups fresh spinach, roughly chopped

Herbs and Seasonings

  • 1 teaspoon dried parsley
  • 1 teaspoon minced garlic
  • ½ teaspoon dried thyme
  • ¾ teaspoon salt
  • ¼ teaspoon pepper

Protein

  • 2 boneless skinless chicken breasts (about 1 lb)

Liquids & Dairy

  • 4 cups low sodium chicken broth
  • ¾ cup heavy cream
  • ¼ cup grated Parmesan cheese

Other

  • 1 tablespoon corn starch
  • 3 cups small gnocchi (500g)

Instructions

  1. Prepare the slow cooker: Line a 4-6 quart slow cooker with one Reynolds Kitchens® Slow Cooker Liner for easy clean up.
  2. Add vegetables and seasonings: Place celery, carrots, onion, dried parsley, minced garlic, dried thyme, salt, pepper, and chicken broth into the slow cooker. Stir to combine all ingredients well.
  3. Add chicken: Place the chicken breasts in the slow cooker, pressing them down into the liquid so they are submerged.
  4. Cook the soup: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours until the vegetables are tender and the chicken is thoroughly cooked.
  5. Shred the chicken: Carefully shred the cooked chicken inside the slow cooker using two forks, or remove the chicken to a cutting board to chop into bite-sized pieces before returning it to the soup.
  6. Thicken the soup and add gnocchi: Whisk together the heavy cream and corn starch until smooth. Stir this mixture along with the gnocchi into the soup. Cover and continue cooking on high for 1 hour until the gnocchi is tender and the broth thickens slightly.
  7. Add spinach and cheese: Stir in the fresh chopped spinach and grated Parmesan cheese. Adjust the seasoning to taste with additional salt and pepper if needed.
  8. Serve: Ladle the soup into bowls and enjoy hot. The soup pairs wonderfully with crusty bread for a complete comforting meal.

Notes

  • This soup is thick, creamy, and packed with tender chicken and fresh vegetables, making it perfect for a nourishing meal.
  • Using a slow cooker liner dramatically simplifies cleanup after cooking.
  • For a lighter option, substitute heavy cream with half-and-half, but this will alter the soup’s creaminess slightly.
  • Feel free to add other vegetables like peas or mushrooms for variation.
  • Serve with crusty bread or garlic toast for a heartier meal.
