For Assembling Burger

- 2 strips bacon, cooked and cut in half
- 2 brioche buns, toasted
- Mayo, as needed
- Sriracha, as needed

Instructions
- Prepare the Chicken Patty Mixture: In a mixing bowl, combine ground chicken, egg, breadcrumbs, red bell pepper, green onion, smoked paprika, cajun seasoning, sea salt, black pepper, and minced garlic. Mix thoroughly until all ingredients are well incorporated.
- Shape the Patties: Divide the meat mixture into 4 equal portions. Roll each portion into a ball to form the patty base.
- Cook the Patties: Preheat avocado oil in a skillet over medium heat. Add the 4 chicken patty balls, and press down with a spatula to flatten. Cook for 4-5 minutes on one side.
- Add Cheese and Finish Cooking: Flip the patties, lay a slice of cheddar cheese on top of each, then cover the skillet with a lid. Cook an additional 3-4 minutes until cooked through and the cheese is melted.
- Prepare the Buns and Sauces: While the patties are cooking, spread mayo and sriracha sauce on the inside of each toasted brioche bun using a butter knife.
- Assemble the Burger: Place 2 cheesy chicken patties onto the bottom bun, top with sliced red onion and 2 pieces of crispy bacon. Finish with the top bun. Repeat for the second burger.
Notes
- Use freshly ground chicken for best texture.
- Adjust spiciness by varying sriracha and cajun amounts.
- Try other cheeses or add pickles for variation.
