Scale
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour, measured properly (see notes)
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1/4 cup granulated sugar, for rolling
Instructions
- Cream Butter and Sugar: In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs and vanilla extract until well combined.
- Add Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients and mix until just combined.
- Chill Dough: Cover the bowl and chill dough in the refrigerator for 30 minutes.
- Preheat and Prep: Preheat oven to 350°F. Line a baking sheet with parchment paper.
- Shape and Bake: Scoop dough into 1.5 tablespoon-sized balls and roll in granulated sugar. Place on the prepared baking sheet, 2 inches apart. Bake for 10-12 minutes, or until edges are lightly golden.
- Cool: Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- Measuring Flour: Use a kitchen scale for accurate flour measurement. If using a measuring cup, spoon and level the flour to avoid dense cookies.
- Storing Dough: Refrigerate dough for 2-3 days or freeze for up to 3 months.
- Storing Cookies: Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 3 months. Add a slice of bread to the container to keep cookies moist.
