Shrimp Skewers:
- 1 lb large shrimp, cooked, deveined
- 6 grilling skewers
- 2 Tbsp coconut oil or butter
- 1/4 tsp cayenne powder
Pineapple Salsa:
- 1 lime
- 2 Tbsp fresh cilantro (optional)
- 6 grape tomatoes, minced
- 3/4 cup pineapple, minced
Instructions
- Preheat the grill: Heat the grill to about 350 degrees F (medium-high heat).
- Prepare shrimp skewers: Thread 4-5 shrimp onto each skewer.
- Coat with seasoning: Mix coconut oil or butter with cayenne powder and coat each shrimp skewer.
