Beef and Marinade

  • 1 pound flank steak

  • 1 teaspoon ground ginger
  • 1 tablespoon sesame oil

Instructions

  1. Prepare the Marinade: In a small bowl, whisk together gochujang, green onions, soy sauce, rice vinegar, garlic, ginger, sesame oil, and sugar. Pour half of this mixture into a large ziplock bag.
  2. Marinate the Steak: Add the flank steak to the ziplock bag with marinade, seal it, and refrigerate for 30 minutes or up to overnight to absorb flavors. Cover the remaining sauce and chill until ready to use.
  3. Cook the Steak: Heat 2 tablespoons of oil in a large pan or skillet over medium-high heat. Using tongs, transfer the steak from the bag (discard excess marinade inside the bag) and cook for 5-8 minutes on each side until the outside is well-browned.
  4. Rest the Steak: Transfer the cooked steak to a large cutting board and let it rest while you prepare the noodles and vegetables.
  5. Sauté Noodles and Veggies: Add sliced onions, mushrooms, ramen noodles, ramen seasoning, and the reserved marinade from the bag to the same pan. Pour 1 ½ cups of water over all ingredients and bring to a gentle simmer.
  6. Cook Noodles: Allow the noodles and vegetables to cook for 5-7 minutes until the noodles are tender and cooked through.
  7. Combine Steak and Sauce: Thinly slice the rested steak against the grain into strips. Add the steak strips and the reserved sauce to the pan. Stir well to combine all ingredients and cook a few more minutes until the steak is heated through.
  8. Serve: Garnish with extra green onions if desired and serve the spicy Korean beef noodles immediately for the best flavor.
