Description

These Spinach and Feta Pinwheels are a delicious and flaky appetizer or snack, perfect for parties or a light lunch. Made with gluten-free puff pastry and filled with a savory spinach and feta cheese mixture, they’re easy to make and even easier to enjoy!


Ingredients

Pinwheels:

  • 4 sheets gluten-free puff pastry (thawed if frozen)
  • 200g spinach leaves, washed, dried well, and finely chopped
  • 4 spring onions, finely sliced
  • 150g Greek feta cheese, crumbled
  • 50g Parmesan cheese, finely grated
  • 1 egg, whisked
  • Salt and pepper to taste

Yogurt Dip:

  • 150g Greek yogurt
  • Zest of 1 lemon
  • 1 garlic clove, minced
  • 2 teaspoons extra virgin olive oil
  • Pinch of salt and pepper

Instructions

  1. Prepare Filling: Preheat oven to 210°C (410°F) fan force. Line 2 baking trays with parchment paper. In a bowl, combine spinach, spring onions, feta cheese, Parmesan cheese, salt, and pepper. Mix well.
  2. Assemble Pinwheels: Spread the spinach and feta mixture evenly over each puff pastry sheet, leaving a small border at the top edge. Roll up tightly from the bottom edge and seal the edge.
  3. Slice and Brush: Slice each roll into 2cm thick pinwheels. Place them on the prepared baking trays and brush with the whisked egg.
  4. Bake: Bake for 20 minutes, or until golden brown and puffed up.
  5. Make Yogurt Dip: While the pinwheels bake, combine all dip ingredients in a small bowl and mix well.
  6. Serve: Allow pinwheels to cool for 10 minutes before serving with the yogurt dip.

Air Fryer Instructions:

  1. Halve the recipe ingredients.
  2. Follow steps 1-3 above.
  3. Place pinwheels in a single layer in the air fryer basket lined with baking paper.
  4. Cook at 200°C (390°F) for 15 minutes, or until golden brown and cooked through.

Notes

  • Ensure spinach is thoroughly dried before using to prevent soggy pinwheels.
  • For best results, use high-quality puff pastry.
  • If making ahead of time, assemble the pinwheels and refrigerate for up to 24 hours before baking.
  • These pinwheels are best served fresh but can be stored in an airtight container at room temperature for up to 2 days.
