Scale
- 5 cups oyster crackers
- 1 cup unsalted butter (2 sticks)
- 1 cup packed light brown sugar
- 3 teaspoons ground cinnamon, divided
- 1 teaspoon vanilla extract
- 2 tablespoons granulated sugar
- 3/4 teaspoon kosher salt
Instructions
- Preheat and Prep: Preheat oven to 350°F. Line a baking sheet with aluminum foil.
- Spread Crackers: Arrange oyster crackers in a single layer on the prepared baking sheet.
- Make Cinnamon Sugar Mixture: In a small bowl, combine granulated sugar, 1 teaspoon of cinnamon, and salt. Set aside.
- Make Caramel: In a medium saucepan, melt butter over medium heat. Stir in brown sugar and 2 teaspoons of cinnamon. Bring to a boil, stirring constantly, and cook for 2 minutes.
- Coat Crackers: Remove from heat and stir in vanilla extract. Pour caramel mixture over crackers and stir until evenly coated.
- Bake: Bake for 10 minutes, or until the caramel is bubbly.
- Add Cinnamon Sugar: Remove from oven and immediately sprinkle with the cinnamon sugar mixture.
- Cool and Serve: Let crackers cool completely before breaking into bite-sized pieces and serving.
Notes
- Use fresh oyster crackers for the best results.
- For a richer flavor, use dark brown sugar instead of light brown sugar.
- If the caramel is too thick, add a tablespoon or two of water to thin it out.
- Be careful not to overbake the crackers, or they will become too hard.
- Store churro bites in an airtight container at room temperature for up to 3 days.
