Description

This Sweet Potato Breakfast Hash recipe is a hearty and flavorful dish that combines sweet potatoes, bacon, eggs, and kale for a satisfying breakfast or brunch option.


Ingredients

Units Scale

Bacon:

  • 4 slices bacon, cut into 1/2-inch thick pieces

Vegetables:

  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 large sweet potato, peeled and diced into 1/2-inch cubes (approx 4 cups cubes)
  • 2 cups kale leaves, roughly chopped

Spices:

  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Kosher salt and freshly ground black pepper to taste

Eggs:

  • 4 eggs

Garnish:

  • 1 green onion, sliced

Instructions

  1. Cook Bacon: Heat a large sauté pan on medium heat. Add the bacon and sauté until golden and crispy. Remove the bacon and set aside.
  2. Sauté Vegetables: In the same pan, sauté the onion and red bell pepper for one minute. Add the sweet potato and spices. Cook for 10-12 minutes until sweet potatoes are tender.
  3. Add Kale: Stir in the bacon, kale, and cook for another 1-2 minutes until kale is wilted.
  4. Add Eggs: Create wells in the hash and crack an egg into each well. Cook until eggs reach desired doneness.
  5. Finish and Serve: Season with salt and pepper, top with green onions, and serve hot.

Notes

  • My favorite pan to use when cooking this recipe is a Staub cast iron pan, as it cooks evenly and retains the heat.
