Bacon:
- 4 slices bacon, cut into 1/2-inch thick pieces
Vegetables:
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 large sweet potato, peeled and diced into 1/2-inch cubes (approx 4 cups cubes)
- 2 cups kale leaves, roughly chopped
Spices:
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- Kosher salt and freshly ground black pepper to taste
Eggs:
- 4 eggs
Garnish:
- 1 green onion, sliced
Instructions
- Cook Bacon: Heat a large sauté pan on medium heat. Add the bacon and sauté until golden and crispy. Remove the bacon and set aside.
- Sauté Vegetables: In the same pan, sauté the onion and red bell pepper for one minute. Add the sweet potato and spices. Cook for 10-12 minutes until sweet potatoes are tender.
- Add Kale: Stir in the bacon, kale, and cook for another 1-2 minutes until kale is wilted.
- Add Eggs: Create wells in the hash and crack an egg into each well. Cook until eggs reach desired doneness.
- Finish and Serve: Season with salt and pepper, top with green onions, and serve hot.
Notes
- My favorite pan to use when cooking this recipe is a Staub cast iron pan, as it cooks evenly and retains the heat.
