Description

These Ube Mochi Pancakes are a delightful twist on traditional pancakes, featuring the unique flavor of ube. They are fluffy, slightly sweet, and perfect for a special breakfast or brunch.

  • 1 3/4 cup sweet rice flour
  • 2 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients:

  • 1/4 cup light brown sugar
  • 2 tbsp unsalted butter, melted
  • 2 eggs
  • 1 1/2 cup coconut milk, full fat
  • 1 tsp vanilla extract
  • 1/2 tsp ube extract
  • 1/4 cup ube halaya

Instructions

  1. Combine Ingredients: In a large bowl, whisk together all the ingredients until a uniform, thick purple batter forms.
  2. Cook Pancakes: Heat butter in a nonstick pan over medium low heat. Spoon the batter into the pan, cook for 1-2 minutes until bubbles appear, then flip and cook for another 1-2 minutes.
  3. Serve: Transfer pancakes to a plate, repeat with remaining batter. Top with fresh fruit and maple syrup.

Notes

  • The key to the purple color is Butterfly Ube Extract. Adjust the amount based on the extract used for desired color.
