For the Ganache

  • 1 cup white chocolate chips
  • 1/2 teaspoon lemon flavor extract
  • 2 drops yellow food coloring
  • 1/4 cup butter
  • Zest of 1 lemon
  • 3 tablespoons heavy whipping cream

  • 1/4 cup powdered sugar

Instructions

  1. Melt White Chocolate
    Pour the white chocolate chips into a medium heat-safe bowl. Add the lemon extract and yellow food coloring. Set aside. Keep a fine mesh strainer ready near the bowl for later steps.
  2. Prepare the Lemon Mixture
    In a medium saucepan, melt the butter over low heat, stirring in the lemon zest. Once fully melted, increase the heat slightly and pour in the heavy whipping cream. Whisk together and cook until the mixture just begins to simmer. Be careful not to overheat.
  3. Strain and Combine
    Remove the saucepan from heat immediately and strain the hot liquid using the mesh strainer to remove the lemon zest. Pour it over the bowl of white chocolate chips. Whisk the mixture thoroughly until the white chocolate is melted and smooth.
  4. Chill the Ganache
    Cover the bowl and refrigerate the white chocolate lemon ganache until it becomes chilled and firm. This will take about an hour.
  5. Shape the Truffles
    Once the ganache is firm, scoop it into 12 small portions. Roll each portion into a smooth ball using your hands.
  6. Add the Final Touch
    Roll each truffle in powdered sugar until fully coated. For best results, refrigerate the truffles for about 1 hour until they are firm.

Notes

  • For a more intense lemon flavor, you can increase the lemon zest slightly or add more lemon extract.
  • To ensure a smooth ganache, do not allow the cream mixture to over-simmer or boil.
  • These truffles can be stored in an airtight container in the refrigerator for up to a week.
