These Zucchini Fries are a delicious and healthier alternative to traditional fries. Crispy on the outside, tender on the inside, and incredibly easy to make with just 4 simple ingredients!

Zucchini Fries:
- 2 large zucchini
- 2 large eggs
- 2 cups panko bread crumbs
- 1/2 cup parmesan cheese, finely grated
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Preheat the oven: Preheat the oven to 200C/400F. Line a large baking sheet with parchment paper and set aside.
- Slice zucchini: Slice zucchini into thin matchsticks. Whisk eggs in a bowl. In a separate bowl, combine breadcrumbs, parmesan cheese, salt, and pepper.
- Coat zucchini: Dip zucchini in eggs, then in breadcrumb mixture, and place on the baking sheet.
- Bake: Bake for 22-25 minutes, turning occasionally for crispiness. Serve hot.
Notes
- Leftover fries can be stored in the refrigerator for up to 5 days.
- To reheat, use an oven, air fryer, or pan.
