Description

These Zucchini Fries are a delicious and healthier alternative to traditional fries. Crispy on the outside, tender on the inside, and incredibly easy to make with just 4 simple ingredients!


Ingredients

Zucchini Fries:

  • 2 large zucchini
  • 2 large eggs
  • 2 cups panko bread crumbs
  • 1/2 cup parmesan cheese, finely grated
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat the oven: Preheat the oven to 200C/400F. Line a large baking sheet with parchment paper and set aside.
  2. Slice zucchini: Slice zucchini into thin matchsticks. Whisk eggs in a bowl. In a separate bowl, combine breadcrumbs, parmesan cheese, salt, and pepper.
  3. Coat zucchini: Dip zucchini in eggs, then in breadcrumb mixture, and place on the baking sheet.
  4. Bake: Bake for 22-25 minutes, turning occasionally for crispiness. Serve hot.

Notes

  • Leftover fries can be stored in the refrigerator for up to 5 days.
  • To reheat, use an oven, air fryer, or pan.
