Ingredients:
- 1 pkg. Eckrich Smoked Sausage
- 1 Tbsp. butter
- 1/2 red onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 1/4 cup mushrooms, chopped
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 cup spinach, roughly chopped
- 1 cup cherry tomatoes, halved
- 12 eggs
- 1/3 cup milk
- 3/4 cup mozzarella cheese, shredded
Instructions
- Preheat oven and prepare dish: Preheat oven to 375 degrees. Spray a 9X13 inch casserole dish.
- Sauté veggies and sausage: Chop all veggies. In a skillet, cook onions, bell peppers, sausage, mushrooms, salt, and pepper. Add spinach and tomatoes.
- Assemble casserole: Transfer cooked mixture to casserole dish.
- Prepare egg mixture: Whisk eggs, milk, and optional cheese. Pour over the veggie-sausage mix.
- Bake: Top with cheese and bake for 45 minutes.
- Serve: Serve warm and enjoy!
