Description

This Easy Sausage Breakfast Casserole is a hearty and delicious dish perfect for feeding a crowd at breakfast or brunch. Packed with savory smoked sausage, colorful veggies, and gooey cheese, it’s a complete meal in one pan.

Ingredients:

  • 1 pkg. Eckrich Smoked Sausage
  • 1 Tbsp. butter
  • 1/2 red onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 1/4 cup mushrooms, chopped
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 cup spinach, roughly chopped
  • 1 cup cherry tomatoes, halved
  • 12 eggs
  • 1/3 cup milk
  • 3/4 cup mozzarella cheese, shredded

Instructions

  1. Preheat oven and prepare dish: Preheat oven to 375 degrees. Spray a 9X13 inch casserole dish.
  2. Sauté veggies and sausage: Chop all veggies. In a skillet, cook onions, bell peppers, sausage, mushrooms, salt, and pepper. Add spinach and tomatoes.
  3. Assemble casserole: Transfer cooked mixture to casserole dish.
  4. Prepare egg mixture: Whisk eggs, milk, and optional cheese. Pour over the veggie-sausage mix.
  5. Bake: Top with cheese and bake for 45 minutes.
  6. Serve: Serve warm and enjoy!
